On New Years Day 2010 instead of having (yet another) huge roast dinner we had a delicious brunch of bagels, smoked salmon, eggs benedict, croissants, fresh fruit salad, pates, cheeses and Bucks Fizz. It was yummy but we slightly overdid it with the smoked salmon and had lots left.

A great family favourite, make double and freeze one.
I like to cut it into thick slices before freezing it, then i can just pull a slice out each day and pop it in my sons school lunch box. It makes a tasty healthy alternative sweet treat for snack time.
