This healthy cake is so easy to do, it freezes well so its a great way to use surplus apples from the season.
Guernsey Apple Cake Ingredients
- 225g plain wholemeal flour
- 2 tsp fresh grated nutmeg (optional)
- 1 tsp cinamon (optional)
- 2 tsp baking powder
- 225g cooking apples peeled cored chopped
- 100g butter or good cooking fat
- 225g raw cane sugar (but any brown sugar you have in will work well)
- 2 eggs beaten
Guernsey Apple Cake Cooking Instructions
- Grease a 7inch deep round tin and line it with greaseproof paper
- Cream the butter and the sugar add the eggs a little at a time
- Sift all the remaining dry ingredients together in a clean bowl
- Add the apple and stir well to combine gradually
- Add the the dry mixture to the creamed mixture then turn it all in to the prepared tin
- Bake at 170′c(325′F) gas mrk 3 for about one and half hours
- When cooked, urn out and cool on a wire rack
Optional: Brush with honey and sprinkle with a little sugar, or dust with icing sugar.
