Guernsey Apple Cake

This healthy cake is so easy to do, it freezes well so its a great way to use surplus apples from the season.

Guernsey Apple Cake Ingredients

  • 225g plain wholemeal flour
  • 2 tsp fresh grated nutmeg (optional)
  • 1 tsp cinamon (optional)
  • 2 tsp baking powder
  • 225g cooking apples peeled cored chopped
  • 100g butter or good cooking fat
  • 225g raw cane sugar (but any brown sugar you have in will work well)
  • 2 eggs beaten

Guernsey Apple Cake Cooking Instructions

  1. Grease a 7inch deep round tin and line it with greaseproof paper
  2. Cream the butter and the sugar add the eggs a little at a time
  3. Sift all the remaining dry ingredients together in a clean bowl
  4. Add the apple and stir well to combine gradually
  5. Add the the dry mixture to the creamed mixture then turn it all in to the prepared tin
  6. Bake at 170′c(325′F) gas mrk 3 for about one and half hours
  7. When cooked, urn out and cool on a wire rack

Optional: Brush with honey and sprinkle with a little sugar, or dust with icing sugar.
