Flippin eck! It’s that day when the kids gather in the kitchen to laugh at mum and dad trying to make pancakes and take particular delight watching you try to flip them.
Assuming you don’t have any accidents (pancakes stuck to the ceiling or dropping on the floor becoming a treat for the dog) this basic recipe makes 10-14 pancakes for your darling brood:
- 1 cup flour
- 4 large eggs
- 1/2 cup milk
- 1/2 cup water
- pinch of salt
Pancake/Crepe Instructions:
Prepare the Mix
You need to sift the flour into a mizing bowl first and add the pinch of salt. Then you lightly beat the 4 eggs and gradually add to the flour. Add the milk. Mix it all up. For best results you should leave it to rest for an hour (but it won’t be a disaster if the kids don’t want to wait that long!)
Now for the fun part!
- Add a little oil and melted butter to a clean (non stick) frying pan and heat.
- Add a ladle of the pancake mixture
- Brown on one side then turn over and brown the other. (I will be very disappointed with anyone who doesn’t attempt the famous flip!)
- Serve with ANYTHING: Chocolate, icecream, lemon, sugar, maple syrup, jam. The list is endless.
