On New Years Day 2010 instead of having (yet another) huge roast dinner we had a delicious brunch of bagels, smoked salmon, eggs benedict, croissants, fresh fruit salad, pates, cheeses and Bucks Fizz. It was yummy but we slightly overdid it with the smoked salmon and had lots left.
I’m not a hugely fussy eater but with smoked salmon I prefer to eat it fresh out of the packet. I also hate to see things go to waste so I had a look around for things to do with leftover smoked salmon. Here are some tasty suggestions that I found:
Salmon Cakes
Chop up the salmon and mix with shredded potato. Add lemon zest, chopped fresh parsley, dill, salt, peppar and whole grain mustard. Bind with dried bread crumbs (or flour) and beaten egg then pan fry.
- For salmon bites just make them a little smaller.
- Lemon and mayonaise are a tasty and simple dressing.
Japanese Salmon Dish
Flake the cold salmon, top with splash of soy, lemon or lime juice, some grated ginger and maybe some Tabasco, and some chopped chives. Serve with freshly cooked hot rice.
Garlic Salmon Pasta
Flake the salmon and toss with fresh cooked pasta. (Add some garlic, butter, fresh dill, salt and peppar OR stir in your favourite pesto sauce).
Salmon Ravioli
Flake the salmon, mix with a little ricotta, egg and fresh thyme. Stuff into won-ton or egg roll wrappers. Simmer gently until cooked (usually 2/3 minutes). Toss with melted butter before serving.
Smoked Salmon Omelette
Make your omelette as usual and instead of adding ham or bacon, throw in flaked smoked salmon. Delicious!
Smoked Salmon and Cheese on Toast
Flake the salmon and mix with creme fraiche, chopped chives, spring onions, s&p. Lightly toast your bread under the grill, when lightly browned top with the salmon mixture. Sprinkle some grated cheese on the top then return to the grill. Remove when the cheese starts to bubble.
